Chicken Curry (Malay Style)


Ingredients
  • 1 whole chicken (cut into 12 pieces)
  • ½ cup cooking oil
  • 2 tea spoon of clarified butter
  • 3 tea spoon of meat curry powder
  • 1 tea spoon of cumin powder
  • 1 tea spoon of coriander powder
  • 1 tea spoon of chilly powder
  • 2 tea spoon of kerisik (toasted, grounded coconut paste)
  • 2 cups of cocnut milk
  • 5 potatoes
  • 3 tomatoes
  • 3 green chillies
  • Salt
To be Blended:
  • 8 onions diced
  • 4 cloves of garlic diced
  • 3 cm ginger

Ingredients to be pre- fry (tumis):
  • 6 onions diced
  • 4 cloves of garlic diced
  • 3 cm ginger
  • 1 springs of curry leaves
  • 6 cm cinnamon
  • 5 cloves
  • 3 star anises
  • 5 cardamons
  • ½ tea spoon of cumin powder
Preparation Method:
  • Heat up the cooking oil and put in all the ingredients which are to be pre-fired.Stir well while frying until the aroma comes out.
  • Put in the curry powder, cumin powder, coriander powder, chilly powder & blended ingredients. Stir well until the oil seems to be at the edge of the mixture.
  • put in the cleaned chicken with some water. Stir well until chicken becomes tender.
  • Pour in coconut milk, potatoes, kerisik and salt & let the mixture sizzle. When the potatoes already softened, put in tomatoes, green chillies.
  • Finally stir again and let the mixture sizzle before serving.
